MEATBALL BAKE 
1 pkg. scalloped potatoes
1 c. diced celery
3 1/2 c. boiling water
2 tsp. butter
1 egg
1/4 c. milk
1/4 c. catsup
1 tbsp. instant or finely chopped onion
1 c. bread crumbs
1 lb. ground beef

Into boiling water put potatoes, celery, butter at 400 degrees. Bake 15 minutes. Combine egg, milk, catsup, onion, salt, pepper and crumbs; beat with fork. Add beef and mix good.

Remove potatoes from oven. Dip rounded balls of meat, partially subdued in potato mixture. Bake 30-35 more minutes. Garnish with parsley and pepper strips. Yields: 4-6 servings.
