BANANA NUT BREAD | |
1/4 c. shortening 1/2 c. sugar 1 beaten egg 1 c. bran 2 tbsp. water 1 1/2 c. mashed bananas 1 1/2 c. flour 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. vanilla extract 1/2 c. chopped nutmeats Cream shortening and sugar; add egg, then bran; mix thoroughly. Combine water and banana, add alternately with sifted dry ingredients. Mix thoroughly, add vanilla and nutmeats. Bake in greased 1 pound loaf pan in moderate oven (350 degrees) for about 1 hour. Any type bran may be used successfully. |
