SCRAMBLED SPANISH TOFU 
1 block tofu, drained well
2 ripe fresh tomatoes, peeled & diced
1/2 c. diced bell pepper
2 tbsp. oil
Chopped cilantro
1 tbsp. McKay's chicken seasoning
1/2 c. chopped green onion, including tops

Saute onion, bell peppers and tofu in oil. Drain if necessary. Add McKay's and cilantro. Mix well. Serve hot. Salt and pepper, if desired.
