SWEET POTATO PIE
2 (15 oz. ea.) cans sweet potatoes/yams (or 3 fresh sweet potatoes)
3/4 cup brown sugar
1/2 cup (1 stick) butter
a pinch of all-purpose flour
1 (10 oz.) bag marshmallows

Preheat oven to 350°F.

Melt butter in a small microwavable bowl then add brown sugar and the pinch of flour. Mix it all up until brown sugar becomes thick.

While doing this drain both cans of sweet potatoes/yams or cook sweet potatoes (microwave or stove top directions). Add the sugar/butter/flour and mix all together with the sweet potatoes.

Note: You can mash your sweet potatoes or keep them partly cubed.

Transfer to a 9x13-inch casserole baking pan and sprinkle marshmallows to cover the top.

Bake at 350°F for 25 minutes to 30 minutes depending on the oven type.

Will make around 12 servings of sweet potato pie for any holiday gathering.

Since microwave ovens vary in power, you may need to adjust your cooking time.
