ITALIAN CAULIFLOWER CASSEROLE | |
1 lg. head cauliflower in flowerettes 1 tbsp. sugar 1 tsp. pepper 1 med. onion, chopped 1/2 c. diced green pepper 16 oz. chunky Italian tomatoes 1/4 c. melted butter 1 c. Saltine cracker crumbs 1/2 c. cheddar cheese 1/2 tsp. salt Cook cauliflower in salt water for 5 minutes; drain. Mix butter, sugar, salt, pepper, crumbs, green pepper, onion and 1/2 cheese. Add cauliflower; toss. Put into 2-quart casserole; cover. Bake at 350 degrees for 45 minutes. Uncover; add 1/2 cheese and bake 15 minutes more. |
