ZUCCHINI FRITTERS 
3 c. zucchini or other squash, grated
1/3 c. sharp cheddar cheese, grated
1 c. Bisquick
1 clove garlic, crushed
1 beaten egg

Season with salt and pepper to taste. Mix well and drop into hot oil and cook until golden brown. Drain on paper towel. Serve while hot.
