ZIPPY ZUCCHINI STIR FRY 
1 lb. sliced onion
2 stalks diced celery
2 med. diced green bell pepper
1 tbsp. peanut or olive oil
1 tbsp. tomato paste
2 tbsp. cornstarch
1/2 c. water
1 pkg. frozen snow peas
2 (10 inch) sliced zucchini
6 lg. sliced mushrooms
1 can stewed tomatoes
Salt (try Spike or VegSal)
Pepper

In large fry pan or wok, stir fry first 3 ingredients in oil at medium heat until onions start turning transparent. Stir in tomato paste, cornstarch and water. Simmer for 2 minutes, stirring constantly. Add rest of ingredients, season to taste, continue to stir fry until zucchini cuts easily with fork. Good by itself or spooned over rice or noodles. Serves 5-8.
