CHRISTMAS CARAMEL CUSTARD 
3/4 c. sugar
3 eggs
Pinch of salt
2 c. milk, scalded
1/2 tsp. BLAIR vanilla flavoring

Heat 1/2 cup of the sugar slowly in a heavy metal skillet, stirring constantly with a wooden spoon until sugar melts and turns a light caramel color. Pour a spoonful of the syrup in each of 5 custard cups and let stand until cooled.

Beat the eggs slightly with remaining sugar and salt. Add the milk slowly while stirring. Add Blair vanilla flavoring. Strain and pour the strained mixture carefully into prepared cups so as not to disturb the caramel. Place cups in a pan of hot water and bake until a knife inserted in the center comes out clean (about 40 minutes). Remove and cool. To serve, run a knife around the edge of the custard, turn out and serve with whipped cream.
