MINIATURE CHEESECAKES 
6 vanilla wafers
8 oz. cream cheese, softened
1/4 c. sugar
1 1/2 tsp. lemon juice
1/4 tsp. vanilla
1 egg
Pie filling, preserves or fresh fruit

Combine cream cheese, sugar, lemon juice and vanilla, mixing at medium speed until blended. Blend in egg. Place 1 vanilla wafer in each of 6 paper lined muffin cups. Pour filling over wafers. Bake at 325 degrees for 25 minutes. Cool before removing from pan. Top as desired and serve. 6 servings.
