MINIATURE CHEESECAKES 
Vanilla wafers
2 (8 oz.) pkgs. cream cheese (softened)
2 eggs (beaten)
3/4 c. sugar
1 tsp. vanilla extract
1 tsp. lemon juice
1 (lg.) can cherry pie filling

Place a vanilla wafer in a cupcake liner (in a cupcake pan). Combine all ingredients except pie filling. Beat until smooth (about 4 or 5 minutes). Fill each cup 3/4 full with cream mixture. Bake at 350 degrees for 15 minutes. Cool slightly (15-20 minutes). Top with pie filling. Chill completely then remove from cupcake tin. Makes 18-22. (You could use any flavor of pie filling you want.)
