CHINESE FRIED RICE 
3-4 tbsp. oil
4 c. cooked rice, cooled (1 1/4 c. raw rice & 2 1/2 c. boiling water = 4 c. cooked rice)
1 carrot, grated
1 bell pepper, chopped
4 green onions, chopped
3 tbsp. soy sauce
1/2 tsp. pepper
1/2 tsp. salt
1/2 tsp. garlic powder, optional
3 eggs, well beaten
3/4 c. cooked, chopped meat, optional

Heat oil over medium heat in large skillet. Add rice and stir 5-6 minutes. Stir in chopped vegetables, soy sauce and flavorings. Mix well. Push mixture to side of pan. Pour in eggs and scramble. Mix with rice. Add meat, if desired. Makes 8 servings.

Beef, chicken, shrimp, ham or bacon can be used.
