MINI CHEESECAKES 
24 vanilla wafers
2 (16 oz.) pkg. of softened cream cheese
1 c. sugar
2 tsp. vanilla
4 eggs

Line muffin tin with foil liners. Place one vanilla wafer in each liner. Mix cream cheese, vanilla and sugar until well blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake at 325 degrees for 25 minutes. Remove from pan when cool-Chill-top with fruit, nuts or chocolate.
