POT'S MICROWAVE STUFFED POTATOES 
4 med. potatoes, scrubbed
1 tbsp. butter
1/4 c. chopped onion
1/2 to 3/4 c. milk
2 tbsp. butter
Salt and pepper to taste
1/2 c. shredded process cheddar cheese

Bake potatoes according to your microwave for doneness. Melt 1 tablespoon butter in glass dish in microwave (15 seconds). Add onion, cook 4-5 minutes, stirring occasionally.

Cut a thin slice from top of each potato. Scoop potato from shells, keeping shells intact. Mash or rice potato thoroughly.

Heat milk in glass measuring cup - 30 seconds. Add milk, 2 tablespoons butter, salt, pepper and onion to potato. Whip until fluffy. Spoon into potato shells. Top with cheese. Heat in microwave 2-3 minutes or until cheese is melted.

NOTE: For busy people, prepare in advance and reheat 3-4 minutes in your microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
