COCOA BANANA MUFFINETT 
1 1/4 c. all-purpose flour
1 c. Quaker Oats Quick or old fashioned
1/2 c. firmly packed brown sugar
1/3 c. unsweetened cocoa
1 tbsp. baking powder
1/4 tsp. baking soda
2/3 c. mashed bananas, about 2 sm.
1/2 c. low-fat or skim milk
1/3 c. (5 1/3 tbsp.) butter, melted
2 egg whites, slightly beaten
1 tsp. vanilla
Powdered sugar, optional

Heat oven to 400 degrees. Line 30 miniature muffin cups with paper baking cups or spray with non-stick cooking spray. Combine first 6 ingredients; mix well. Add combined bananas, milk, butter, egg whites and vanilla, mixing just until moistened.

Fill prepared cups almost full. Bake 10-12 minutes or until toothpick inserted in center comes out clean. Cool. Sprinkle with powdered sugar.
