EASY, YUMMY OATMEAL COOKIES 
2 sticks butter
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups quick oats
1 cup broken pecans
1 cup raisins

Preheat oven to 350°F.

Melt 2 sticks butter. Pour over 1 cup brown sugar and 1 cup sugar. Add 2 eggs and 1 teaspoon vanilla. Mix.

Combine and blend thoroughly flour, baking soda, and salt.

Stir in oats and nuts. Drop by teaspoon onto greased baking sheet.

Bake 10-12 minutes.

Tried this out tonight, only change I made was adding a teaspoon of cinnamon and a tablespoon of molasses, just because I had them on hand! Turned out delicious and chewy!!

Tried this today, and they tasted great, but the texture was closer to that of a cake than a cookie in my opinion.

The cookies tasted fine, but the texture was more like cake than a cookie. Probably could have reduced the number of eggs. I also substituted apple sauce for the butter, which worked well.

These cookies were so quick and easy to make, and turned out absolutely perfect (for us). I baked them on silpat mats, so they were easy to remove to cooling racks. They were crispy on the outside, and chewy inside. We spent 4 days gobbling this big batch. I did use chopped dates instead of raisins, and whole pecans because I was in too big of a hurry to make them. I'm sure they will be just as good with raisins and chopped nuts. I have tried numerous oatmeal cookie recipes with good results, but these are by far the best.

Be sure not to watch carefully during the last few minutes (beginning at the 8 minute mark) to make sure that you don't overbake these cookies.

I very rarely ever use recipes from the Internet. I couldn't find a simple recipe for Oatmeal Cookies in any of my books, so I tried this one. It really turned out good. I used walnuts instead of pecans or raisins. I will use this recipe again in the near future. Thank you to who ever submitted and shared it with us!

Instead of using butter/margarine, I substituted it with equal parts applesauce and added walnuts. They come out really good and chewy.

This recipe is perfect for bachelors - or anyone who wants easy/fast and REALLY GOOD cookies. Even for a guy who's not a very experienced baker, start to finish took only 30 minutes, including baking time. Hella thumbs up :) :) :)
