RICE SALAD RING 
3 c. cold cooked rice
1 c. sour cream
1/2 c. mayonnaise
1 tbsp. lemon juice
3 green onions, minced
1 sm. green pepper, finely chopped
3 cloves garlic, minced
1 tsp. salt
1/4 tsp. pepper
Garnish:
Rolled ham slices, cherry tomatoes & lettuce

Break up cold rice with fork to separate kernels. Stir together sour cream, mayonnaise, lemon juice, onions, green pepper and garlic. Add salt and pepper. Fold sour cream mixture into rice until well blended. Pack into 1 quart ring mold (sprayed with non-stock vegetable coating or lightly oiled).

At this point, cover with plastic wrap and refrigerate for later serving. To serve: Unmold onto platter and fill center of ring with ham rolls, cherry tomatoes and lettuce.
