RED VELVET CAKE 
1/2 c. Crisco
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
1 tsp. baking soda
1 tbsp. cocoa
1 tsp. salt
1 c. buttermilk
2 1/2 c. plain flour
1 tsp. vanilla flavoring
1 tbsp. vinegar

Cream Crisco; add sugar. Add 1 egg at a time, then add coloring and cocoa. Sift flour and salt together; add buttermilk. Sprinkle soda on top of milk and then add vinegar. Beat well. Makes 3 layers. Bake at 350 degrees for 25-30 minutes.

FILLING:

1 c. evaporated milk
1 c. sugar
3 egg yolks
1/2 c. butter
1 tsp. vanilla
1 1/2 c. coconutc. chopped pecans

Cook and stir on medium heat until thick, about 12 minutes. Add 1 1/2 cups coconut and chopped pecans. Beat until thick enough to spread.
