CASHEW CHICKEN 
4 raw chicken breasts
1 tsp. salt
2 tsp. sugar
6 tbsp. water
2 tbsp. soy sauce
Cornstarch
1 beaten egg
2 tbsp. oil
2 minced garlic cloves
1/2 tsp. ginger
1/2 c. boiling water
1 tsp. Accent
1/2 c. cashews
1/4 c. green onion tops, snipped

Bone chicken and cut into 1-inch cubes. Combine with salt, sugar, water, and soy sauce. Toss well, let stand 30 minutes. Drain, reserving marinade. Dip chicken in cornstarch, then into egg. Brown chicken and garlic in hot oil. Add ginger, water, Accent, and reserved marinade. Cover and cook over low heat 15 minutes. Add cashews and cook 1 minute longer. Remove to serving dish. Top with green onion tops. Serve over rice.
