CHICKEN WITH CASHEWS AND SNOW
PEAS
 
1 whole chicken breast, split, skinned, boned, and cut in 1-inch cubes
2 cloves garlic, peeled and minced
1 tbsp. soy sauce
1 tbsp. dry sherry
2 tbsp. cornstarch
1 tsp. hoisin sauce
1 tbsp. peanut oil
20 snow peas, ends and strings removed
1/2 c. sliced water chestnuts, drained
1/2 c. hot chicken stock (broth)
1/2 tsp. salt
1/2 c. unsalted raw cashews

Marinate chicken 15 minutes in mixture of next 5 ingredients--garlic, soy sauce, sherry, cornstarch, and hoisin sauce. Heat oil in uncovered wok at 375 degrees. Add chicken mixture; stir-fry 3 minutes. Add snow peas and water chestnuts; stir-fry 30 seconds. Add chicken stock and salt; stir-fry until slightly thickened. Stir in cashews. Serve immediately. Makes 2 servings. Good with rice!
