CHICKEN WITH SNOW PEA PODS 
2 boneless chicken breasts
Salt and pepper
1 tbsp. vegetable oil
1 c. celery, diced
1 sm. onion, sliced and separated into rings
1 pkg. frozen pea pods
1/2 c. chicken broth
1 tbsp. soy sauce, lite
1 tsp. cornstarch
1/4 tsp. sugar
1 c. hot cooked rice

Cut chicken into thin strips and sprinkle with salt and pepper. Saute chicken in hot oil until brown. Add celery, onion and pea pods and 2 tablespoons broth. Cover and cook 1 1/2 minutes.

Combine soy sauce, cornstarch, sugar stirring well. Stir this into chicken, mixture. Gradually add remaining 1/4 cup of broth plus 2 tbsp. broth. Cook stirring constantly until thickened, serve over rice.
