MUSSELS WITH FERMENTED
WATERCRESS
 
Watercress
1dozen cooked mussels
Salt

Wash watercress and blanch with boiling water. Place in pot and boil for 10 minutes in salted water, lift out into preserving jars. Cut up mussels and mix in with watercress, top the jars up with the liquid from the watercress and leave for 2-3 weeks. Serve chilled with bread and butter.
