beets
6 c. water
6 c. vinegar
4 1/2 c. sugar
pinch of salt

Wash beets. Cook until tender. Peel and cut in chunks or slices. Put water, vinegar, sugar and salt in pan. Bring to boil. Put beets in until hot. Put in jars. Be sure to have jars and lids hot and do one jar at a time. You can cut the recipe down to make enough just for a meal.
