FISH CAKES 
2 c. canned salmon, tuna or mackerel
1 c. cold mashed potatoes
1/2 c. minced onion
2 tsp. lemon juice
2 eggs (beaten)
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. all purpose flour
1/2 c. oil
Cocktail sauce (optional)

Combine first 7 ingredients, mix well. Shape into 8 patties. Dredge in flour, fry fish cakes in hot oil about 10 minutes or until brown, turn once. Drain well.
