SWEET PEAS RICE 
1 lb. rice (2 c.) (preferably Canilla or Goya Rice)
3 c. water
1 Knorr's bouillon cube (chicken)
1 can Goya Guandules (sweet peas)
1 chopped onion
3 sm. tomatoes
1/2 green pepper
4 cloves garlic, mashed
1 tbsp. tomato paste
1 tsp. salt
1 tsp. vinegar
1 tsp. oregano
2 tbsp. oil

Clean rice well with water.

In one pot put the oil, onion, pepper, garlic, oregano and tomatoes and let simmer for 1 to 2 minutes. Next add the tomato paste, stir; add a little bit of water; stir; add the vinegar and the peas and let it simmer for two minutes.

In another pot, boil the 3 cups of water with the bouillon cube and salt.

In the first pan, add the rice and stir, then add the boiling water and stir. When the water boils off, lower the flame, put the lid on the pan and continue to cook for 25 minutes.
