CHICKEN SALAD 
3 tbsp. lemon juice
4 c. cut up chicken (3 1/2 lb. chicken plus 1 breast)
1 c. sliced celery
1/3 c. chopped onion
1 tsp. salt
1/4 to 1/2 tsp. pepper
2 oz. jar sliced pimento, drained
1/4 c. sliced roasted almonds
1/3 c. mayonnaise or Miracle Whip
1 c. seedless grapes

Pour lemon juice over chicken and stir. Add other ingredients, stir to mix, and chill. Serve in center of cantaloupe ring (2 medium sized melons for 6 servings). Nice served with tray of vegetables, crackers, and cheese.
