APPLE WALNUT CAKE | |
3 c. all purpose flour 2 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 1/2 tsp. ground allspice 1/2 tsp. salt 1/4 tsp. ground cloves 3/4 c. butter, softened 1 1/2 c. sugar 3 eggs 1 tsp. vanilla 1 apple, cored, pared and chopped (about 1 c.) 2/3 c. chopped walnuts FROSTING: 2 (3 oz.) pkg. cream cheese, softened 3 tbsp. applesauce 1 tsp. vanilla 1/4 tsp. cinnamon 4 1/2 c. confectioners sugar Grease and flour a 10 inch tube pan; set aside. Preheat oven to 350 degrees. In large bowl, combine flour, baking powder, cinnamon, allspice, salt, and cloves; set aside. In large bowl, beat butter and sugar until light and fluffy. Beat in applesauce, eggs, and vanilla. Stir in flour mixture until well blended. Stir in apples and nuts. Spoon into pan. Bake 1 hour and 20 minutes or until tested done. FROSTING: In large bowl, beat cream cheese, applesauce, vanilla, and cinnamon until light and fluffy. Gradually beat in confectioners sugar until smooth. Spread over sides and top of cake. |
