SPLIT PEA SOUP 
1 pkg. split peas
1 lg. onion, diced
3 or 4 celery leaves
2 or 3 ham hocks, smoked or 1 lb. bacon, diced
Salt and pepper to taste
Water

Place all ingredients in a saucepan, cover with 2 inches of water. Simmer for 1 hour stirring often, or until peas are done and the ham is tender.

Remove ham hock and remove bones, chop the meat into small pieces and return to the soup. Serve hot.
