CHICKEN NORMANDY | |
4 whole chicken breasts, boned 1/2 tsp. salt 1/4 tsp. pepper STUFFING MIXTURE: 1 c. Bisquick baking mix 1 c. shredded Monterey Jack (4 oz.) 1 tbsp. snipped parsley 1 tbsp. onion, chopped very fine 1/4 c. dry white wine 1/4 tsp. salt 1/4 tsp. pepper 1 egg 1 sm. apple, cored & chopped fine Place chicken breasts, skin sides down, sprinkle with salt and pepper. Mix stuffing ingredients thoroughly and spoon into each breast. Grease rectangular baking dish (12 x 8 x 2 inches). Bring sides of breasts up over filling and if needed, anchor with toothpicks. Place in dish close together. Bake uncovered in 350 degree oven until done, about 45-50 minutes. Garnish with parsley. Serves 4. |
