RASPBERRY - WALNUT SHORTBREAD
BARS
 
1/3 c. raspberry jam
2 eggs
1/2 c. brown sugar
1 tsp. vanilla
2 tbsp. flour
1/8 tsp. salt
1/8 tsp. baking soda
1 c. walnuts, chopped

SHORTBREAD BASE:

1 1/4 c. flour
1/2 c. sugar
1/2 c. butter

PREPARE BASE: Combine flour and sugar and cut in butter until mixture is like fine meal. Press into greased 9 x 9 inch square baking pan. Bake at 350 degrees for about 15 minutes.

Remove from oven and spread jam over shortbread. Beat eggs with sugar and vanilla. Stir in flour, salt, soda and nuts. Spoon over jam and spread lightly. Return to oven and bake 20 minutes longer. Cool; cut into bars.
