PAULA'S COCONUT CAKE 
1 box yellow cake mix
1 1/2 c. milk
1 c. coconut
1/2 c. sugar
1 large can pineapple tidbits
2 c. coconut
16 oz. sour cream
2 c. sugar
8 oz. container Cool Whip
coconut to taste

Follow instructions on cake mix box. Cool cake for 15 minutes.

Combine the milk, 1 cup coconut and 1/2 cup sugar. Bring to a boil and lower heat to simmer. Simmer 1 minute. (I do this step while cake is cooling.) Poke holes in cake with straw or fork and pour mixture over cake. Let cool. Poke tidbits in punched holes. Combine 2 cups coconut, sour cream and 2 cups sugar. Spread over cooled cake. Refrigerate for at least 2 days. Spread Cool Whip and coconut to taste on cake after refrigerated for 2 days. Serve and enjoy!
