ROASTED POTATOES 
8 to 10 med. potatoes
2 lg. onions, sliced
1/4 c. olive oil
1/8 c. grated Italian cheese
1 1/2 to 2 tsp. oregano
1 1/2 to 2 tsp. rosemary
Salt & pepper to taste

Oil a roasting pan, place sliced onions evenly on bottom of pan. Scrub potatoes and microwave high fir 10 minutes (4 to 5 potatoes at a time). Let cool and slice each potato (with skins) into thick slices and place on onions evenly. Sprinkle oil on potatoes, then spices and grated Italian cheese. Place pan under broiler and turn frequently (taking care not to break potatoes) until evenly golden and crispy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
