RUTHIE'S BROWNIES | |
1/4 lb. butter 2 oz. unsweetened baking chocolate 2 eggs 1 c. sugar 1/2 tsp. salt 1 tsp. vanilla 1/2 c. flour 1/2 c. chopped walnuts 1/2 c. semi-sweet chocolate chips It is important to mix ingredients by hand so that only a minimum of air is incorporated into the batter thus making a rich moist brownie. 1. Slowly melt butter and chocolate together in saucepan. 2. In a bowl mix together by hand the eggs and chocolate mixture. 3. Add the sugar, salt and vanilla and flour and blend well. 4. Pour batter into a lightly greased and floured 8 inch square cake pan. 5. Sprinkle chopped walnuts and chocolate chips over raw batter. 6. Bake at 350 degrees for 25 minutes. Check for doneness - a toothpick should come out moist. They are best when slightly undercooked. Gently spread melted chips like frosting. Cut into squares. Yield: 16 to 20. |
