MICRO SCRUMPTIOUS BUTTERSCOTCH
SAUCE
 
1 tbsp. cornstarch
1 1/4 c. light brown sugar, packed
1/2 c. dairy half and half
2 tbsp. light corn syrup
1/8 tsp. salt
1/4 c. butter
1 tsp. vanilla

In 1 1/2 quart casserole stir together cornstarch and brown sugar. Stir in half and half, corn syrup and salt. Add butter. Cover. Microwave at high 3 1/2 to 4 1/2 minutes, until thickened and sugar is dissolved. Add vanilla and stir until smooth and well blended. Serve warm or cold. Makes 1 1/2 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
