CREOLE PRALINE YAM CASSEROLE 
6 med. yams (cooked and peeled) or 3 (16 oz.) cans yams, drained
1/4 c. butter
1 tbsp. light brown sugar
1 tsp. salt and dash of pepper
Hot milk

TOPPING:

1/3 c. light brown sugar
2 tbsp. flour
1/2 tsp. salt
3 tbsp. butter, soft
1/3 c. chopped walnuts

Mash yams in mixing bowl and add 1/4 cup butter, 1 tablespoon brown sugar, 1 teaspoon salt and enough hot milk to moisten. Beat well with electric mixer until fluffy. Put into a buttered shallow 1 1/2 quart casserole. Mix together the topping ingredients and sprinkle over mashed yams. Bake uncovered in a 350 degree oven for 30 minutes.
