CRISPY FISH STICKS | |
3 (1 oz.) slices French bread, cubed 3 tbsp. reduced-calorie mayonnaise 2 tsp. water 1 tsp. lemon juice 1/2 tsp. grated lemon rind 1 1/2 lbs. grouper or other firm whitefish fillets (cut into 1 inch wide strips) Vegetable cooking spray Process bread cubes in food processor for 30 seconds or until crumbs are fine. Sprinkle crumbs on an ungreased baking sheet, bake at 350 degrees for 15 minutes or until browned. Place in shallow dish, set aside. Combine mayonnaise, water, juice and rind in shallow bowl, stir well. Dip fish in mixture, dip in bread crumbs. Place fish on baking sheet, coated with cooking spray. Bake at 425 degrees for 25 minutes or until crispy. Serve with chili sauce. Yields: 6 servings. |
