FRITTATA 
4 med. tomatoes, peeled, chopped & seeded
1 c. chopped green onions
1 (7 1/4 oz.) can artichoke hearts, drained & halved
12 soda crackers, crumbled
6 eggs
1 tsp. mixed herbs
1 tsp. salt
Dash pepper
3 tbsp. oil
Parmesan cheese

Place tomatoes, onion, artichokes and crackers in large bowl. Beat together eggs, herbs, salt, pepper and oil. Add to vegetable mixture, tossing lightly to blend. Pour into greased 9" pie plate and sprinkle with cheese. Bake at 300 degrees for 50 to 55 minutes or until knife inserted in center comes out clean. Serve at room temperature. 6 servings.
