PUMPKIN - UPSIDE DOWN CAKE | |
3 lg. eggs 2 cans (1 lb.) pumpkin 1 1/4 c. sugar 1 c. (12 or 13 oz.) evaporated milk 1/4 tsp. cloves 2 tsp. cinnamon 1 tsp. ground nutmeg 1/2 tsp. ginger TOPPING: 1 pkg. yellow cake mix 3/4 c. butter, melted 3/4 c. chopped pecans Begin with filling. Beat eggs lightly. Add remaining ingredients, beat until well combined. Pour into 9 x 13 inch greased baking dish. Sprinkle dry cake mix over filling. Drizzle butter over cake mix. Bake 30 minutes. Remove from oven and sprinkle nuts on top. Bake 30 minutes longer. |
