POTATO - STUFFED PEPPERS | |
6 green peppers 1 tsp. salt 1 tsp. monosodium glutamate 3 c. thick mashed potatoes 2 tbsp. minced onion 1 c. sharp cheese, grated 1/3 c. milk 1/2 c. minced parsley 1/2 c. salted peanuts, chopped Cut top off of peppers, scrape out seeds and discard. Bring 4 cups of water to a boil then add salt and monosodium glutamate. Drop peppers in the water, reduce heat and simmer 3 minutes then drain. Combine all of the ingredients except the peanuts. Blend well, fill peppers then sprinkle peanuts over top of each pepper. Place peppers side by side in buttered casserole and bake in a 350 degree oven for 25 minutes or until heated completely through. |
