CHOCOLATE CREAM PIE | |
1 c. flour 1/2 tsp. salt 1/3 c. shortening 2 or 3 tbsp. water 1 1/2 c. sugar 1/3 c. cornstarch 1/2 tsp. salt 3 c. milk 4 egg yolks, slightly beaten 1 tbsp. plus 1 tsp. vanilla 2 oz. melted unsweetened chocolate 1/2 pt. heavy cream 2 tsp. sugar 1/2 tsp. vanilla Prepare and bake 9 inch pie shell using first 4 ingredients (prick bottom and sides with fork) for 8-10 minutes at 475 degrees. Stir together sugar, cornstarch and salt in saucepan. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir one minute. Remove from heat. Blend in melted chocolate and vanilla. Immediately pour into baked pie shell. Press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. Beat together last three ingredients and serve pie with sweetened whipped cream. |
