ITALIAN FRIED ZUCCHINI 
1 egg
1/2 cup flour
1/4 tsp. salt
1/4 tsp. white pepper
1/4 tsp. oregano
3 cups olive oil
3 med. Zucchini (about 1 1/2 lb.) slice crosswise, 1/8 inch thick

In small bowl, lightly whisk egg, gradually sift in flour and salt, whisk until smooth. Slowly whisk in 1/3 cup water, batter will be like pancake batter. Let set 15-20 minutes.

Heat oil in deep skillet on medium high heat. One by one dip zucchini in batter, shake off excess. Place in hot oil and fry in small batches, turn until golden color, 1 to 3 minutes. Remove with slotted spoon and drain on a paper towel. Sprinkle with salt, pepper and oregano. Serve immediately!

Some people omit oregano - you be the judge.
