SWISS STEAK 
2 lbs. round steak (3/4 inch)
1 clove garlic
3 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. bacon drippings or butter
1/2 c. onion, chopped
1/2 c. carrots, chopped
1/2 c. celery, chopped
1/2 c. green pepper, chopped
1 lb. can tomatoes, drained
1 c. beef broth

Preheat oven to 300 degrees.

Trim steak; slash edges to prevent curling. Rub in garlic, flour, salt and pepper.

Heat bacon drippings or butter in heavy fry pan; brown steak. Add onions, carrots, celery and green pepper.

Cook over high heat for 2 minutes.

Top with tomatoes and broth. Cover.

Transfer to baking pan. Cover.

Bake in preheated oven for 2 hours or until tender. Serves 4.

NOTE: You may place the browned steak in a baking pan and then add the remaining ingredients. It may be necessary to bake a little longer. Just check after 2 hours.
