LITE MACARONI AND CHEESE 
2 tsp. butter, divided
1/2 c. chopped onion
1 1/2 c. cooked macaroni
3 oz. shredded cheese
3/4 c. evaporated skim milk
1 lg. egg
1/4 tsp. salt
1/4 tsp. paprika

Preheat oven to 350 degrees. Heat 1 teaspoon butter; add onion and saute. Spray 1-quart casserole. Spread 3/4 cup macaroni; top with 1 1/2 ounces cheese and 1/2 of onions. Repeat the above.

In small bowl combine milk, egg, salt; mix well. Pour over macaroni. Sprinkle with paprika. Dot with remaining butter and bake 20-25 minutes.
