SESAME CHICKEN
Vegetable oil
3/4 c. flour
1/2 c. sesame seeds
1 1/2 tsp. seasoned salt
1/2 tsp. parsley
1/2 tsp. garlic powder
1/2 tsp. black pepper
3/4 c. beer
2 whole boneless, skinless chicken breasts, cut into 1-inch pieces
1/2 c. apricot preserves
2 tsp. soy sauce

Pour oil into large skillet to depth of 1 inch, filling no more than 1/3 full. Heat over medium heat to 375 degrees.

Meanwhile in medium bowl, stir together flour and next 5 ingredients. Stir in beer until blended completely. Batter should be thick. Dip chicken pieces, a few at a time, into batter. Lift out each piece with tongs, gently shaking off excess batter, carefully adding to skillet. Fry, stirring, 3-5 minutes until golden brown. Drain on paper towel.

In small bowl, combine apricot preserves and soy sauce. Place chicken on plate, garnish. Serve with apricot sauce.
