MUSHROOM QUICHE 
10 oz. mushrooms (canned & drained)
5 oz. shredded Swiss cheese
5 oz. shredded mozzarella cheese
3 eggs, beaten well
4 oz. milk
2 oz. chopped onions
1 (10") pie shell
2 oz. sifted flour
Salt & pepper to taste

Beat eggs until fluffy. Add salt and pepper. Mix milk and flour together. Add to beaten eggs. Stir in cheese, mushrooms and onions; mix well. Pour into 10 inch pie shell. Preheat oven. Bake at 350 degrees until light brown and fluffy. Serves 4-6. Spinach may be substituted for mushrooms.
