MUSHROOM QUICHE | |
Pastry for 9" pie shell 1 sm. onion, chopped 1/2 lb. fresh mushrooms, sliced 2 tbsp. olive oil 3 eggs, beaten 1/2 c. evaporated milk 1 (8 oz.) carton sour cream 1/2 tsp. nutmeg 1 tsp. salt 1/2 tsp. pepper 1/2 lb. Swiss cheese, diced 1 tbsp. all-purpose flour Line a 9 inch quiche dish or pie pan with pastry; trim excess pastry around edges. Prick bottom and sides of shell with a fork; bake at 425 degrees for 6-8 minutes. Let cool on rack. Saute onion and mushrooms in olive oil until tender. Combine next 6 ingredients in a large bowl; stir well. Combine cheese and flour; add to egg mixture. Stir in onion and mushrooms. Pour into pastry shell and bake at 350 degrees for 45 minutes or until set. |
