WINTER DAY BEAN SOUP | |
2 c. mixed dry beans 2 tbsp. salt 2 qts. water 2 c. diced ham or sliced smoked sausage 1 lg. onion, chopped 1 clove garlic, minced, optional 1 tsp. chili powder 1 (28 oz.) can tomatoes, chopped 1 to 2 tbsp. lemon juice Rinse beans; place in large kettle, cover with water, add salt and soak overnight. Drain; add 2 quarts water and ham and sausage and other ingredients. Add salt and pepper if desired. Simmer 45 minutes or until done. Yield 2 quarts. Works good in crockpot. |
