PORK CON MOLE SALSA 
3 lbs. lean pork cut into cubes
5 whole tomatoes
5 whole jalapeno peppers
1 lg. whole onion
1 clove garlic
1 tsp. cumin powder
Salt and pepper

Boil in pot with water covering meat until almost dry. While pork is cooking, boil tomatoes, peppers and onion. When done, dip into blender and add garlic, cumin powder, salt and pepper. Blend. When pork is ready, pour salsa into pot and simmer on low for 1 hour. Serve over plain rice or Spanish rice.
