2 c. raisins 2 c. flour 1/2 tsp. salt 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. nutmeg 1 c. unsweetened applesauce or fruit cocktail 3/4 c. vegetable oil 2 tsp. vanilla 1/4 tsp. allspice Cook raisins in 2 cups water. Drain and reserve liquid. Blend next 5 ingredients in raisins. Add remaining ingredients including the raisin liquid. Mix well. Place in 9"x13" pan or bundt pan, greased and floured. Bake at 350 degrees until toothpick comes out clean when inserted in top of cake. 1 bread exchange, 1 fruit exchange, 2 fat exchanges. |
