DIABETIC CAKE 
2 c. water
2 c. raisins
1 c. unsweetened applesauce
1 tsp. baking soda
1 1/4 tsp. cinnamon
1 tsp. vanilla
2 eggs
2 tbsp. brown or white Sugar Twin
3/4 c. cooking oil
2 c. flour
1/2 tsp. nutmeg
1/2 tsp. salt

Cook raisins in the water until the water has evaporated. Add the applesauce, eggs, sweetener and oil. Mix well; blend in soda and flour. Add the remaining ingredients and mix well. Bake in 13 x 9 inch pan at 350 degrees for approximately 25 minutes until done by testing. You can also add chopped nuts.
