DIABETIC FRUIT CAKE | |
1 1/3 c. non fat dry milk 1/2 c. orange juice 6 slices pineapple, plus 6 tbsp. juice 2 c. cranberries, chopped 2 med. apples, peeled & chopped Artificial sweetener to equal 1/2 c. sugar 2 tbsp. lemon juice 2 tsp. cinnamon 1 tsp. vanilla extract 8 slices bread, toasted & crumbled Combine dry milk, orange and pineapple juices and whip with milk until stiff. Add pineapples, cranberries, apples, sweetener, lemon juice, cinnamon and vanilla; blend thoroughly. Add bread crumbs and mix well. Pour into non-stick loaf pan. Bake at 350 degrees for 1 hour. Cool and eat. |
